5 New Year’s recipes for quick salads

Caprese

You will need:

  • Medium-sized tomatoes – 3-4 pcs.
  • Mozzarella cheese in brine – 250 g
  • Basil
  • pesto sauce
  • Salt and freshly ground black pepper

Recipe: Wash the tomatoes and cut them into thin slices. Next, take the mozzarella out of the brine and also cut it into circles about 5 mm thick. Then, simply distribute the tomatoes and cheese on a plate, alternating between them. Season with salt and pepper, garnish with pesto, garnish with basil and serve. By the way, pesto can be replaced with balsamic vinegar and olive oil, which goes perfectly with tomatoes.

Beet salad and feta cheese

Very light, hearty, and healthy salad. You can buy ready-made beets – boiled or baked, or try to manage on your own if there is still time.

You will need:

  • Medium-sized beets – 2 pcs.
  • Garlic – 2 cloves
  • Salt – to taste
  • Olive / sunflower oil – 2-3 tbsp.
  • Arugula – 1 bunch
  • Feta cheese – 100 g
  • Pine nuts – 2 tbsp.

Sauce:

  • Olive / sunflower oil – 2 tbsp.
  • Balsamic vinegar – 1 tbsp.
  • Salt – to taste

Recipe: If you still decided to cook this salad for a full cycle, then you bought raw beets. Now it needs to be cleaned and cut into cubes. After that, place it on a baking sheet covered with foil or parchment paper, oil it, add salt and minced garlic, and mix. Then put it in the oven for 40 minutes at a temperature of 200 ° C. At this time you can make the sauce. Mix oil, balsamic vinegar, and salt – that’s it. Wait for the beets to cook. Put the arugula in a salad bowl, lightly pour the sauce over it, add the beets, the feta (also cut the cheese into cubes), sprinkle with pine nuts, and add the rest of the sauce.

Spinach and apple salad

Delicious and fresh salad, which at the same time is ideal for the festive table. If you were looking for one, then here it is!

You will need:

  • Fresh spinach – 70 g
  • Feta cheese – 50g
  • Sweet apple – 1 pc.
  • Lime – 1 wedge
  • Chopped almonds – 1-2 tbsp.
  • Dried cranberries – 1-2 tbsp.
  • Pumpkin seeds – 1 tbsp.
  • Olive oil – 1-2 tbsp.
